KitchenDM: Birria Tacos
Growing up, tacos were a good I held near and dear to my heart. You can never go wrong with a great taco, and when Birria started to become a viral trend online, I just HAD to learn how to make it. Let's get into Taco Tuesday! (To cut time so I don’t have to spend hours slow cooking the meat, I use a pressure cooker to get the same result!)
Ingredients
- 1 chuck roast (3lbs)
- Beef short ribs (optional)
- Salt
- Tbsp olive oil
- 1 white onion, diced
- 1.5-2 tbsp chopped garlic
- 3oz of tomato paste
- 3 cups beef stock
- 5 Chile de arbol
- 2 Ancho chiles
- 2 Guajillo chiles (3 chipotle chiles for substitute)
- Tbsp oregano
- Tbsp thyme
- Tsp marjoram
- Tsp cumin
- Oaxaca cheese, grated
- 1/2 white onion, diced
- Cilantro, chopped
- Corn tortillas
